An autumnal mash recipe for the fall; perfect for using up any remnants of canned pumpkin puree.
Serves: 6-8 servings
  • 1kg new potatoes still in their skins
  • 150g canned pumpkin puree (Libby's is usually sold by Waitrose at this time of year)
  • 150g soft goats' cheese
  1. Cut the potatoes in half and boil in a large saucepan until soft.
  2. Drain and add the canned pumpkin puree and soft goats' cheese.
  3. Mash thoroughly until smooth in colour and serve.
This is a generous quantity of mashed potato so if your family has fewer people you can save half for topping a pie or making into fishcakes.
