cast iron griddle to use on hob, for striped effect
Ingredients
8tortillasI used Mission Wraps
200gbresaola
100gcheddargrated
4spring onionsroughly chopped
1green chillichopped, fresh or pickled
olive oilfor brushing the quesadillas
Instructions
Heat your griddle on the hob.
Meanwhile, lay out four of the tortilla wraps on a flat surface, drape bresaola slices on them evenly.
Sprinkle over grated cheese, scatter over spring onion and chilli. Top with the other four tortilla wraps.
Paint oil on the top outer side of the tortilla circle. Flip it over oiled side down onto the griddle and press down with a spatula.
Whilst the tortilla toasts on the griddle, paint the upper side with oil too. After 2 minutes, check whether your stripes have appeared (the first one always takes longest) and flip over to toast the other side. Repeat with each pair of filled tortillas.
Cut to toasted tortillas into triangles and serve immediately. Alternatively you can let them cool down and put them in lunch boxes.
