Cannellini Bean Dip With Butternut Squash

Ingredients

cannellini beans
drained
100
g
butternut squash
cooked pieces
2
tbsp
tahini paste
2
tsp
lemon juice
1
clove
garlic
peeled, I used a teaspoon of "Lazy" purée
2
tbsp
olive oil
plus extra to drizzle
pumpkin seeds
salt and pepper to sprinkle
Instructions
Place the cannellini beans, butternut squash, tahini paste, lemon juice, garlic and oil in the Vitamix or power blender.
Blend on the purée program or full power for around one minute.
Scatter with the seeds and seasoning to serve. Add an extra drizzle of olive oil if you wish. Eat with vegetable sticks and bread.
