300gdark chocolatebroken into squares
300gquarkplain
Instructions
Melt the chocolate, I use a double boiler but a heatproof bowl over simmering water works just as well, as does bursts of medium power in the microwave.
When the chocolate is melted, allow to cool slightly before beating in the quark using a whisk, until smooth and evenly coloured.
Decant into dishes and chill before serving. You can eat straight away if you wish but the texture goes firmer when chilled which feels more indulgent.
Notes
I made this batch with a 50/50 ratio but you can reduce the amount of chocolate slightly, to 200g if you prefer.
